Ingredients
For the Puris
- 1 cup Whole Wheat Flour atta
- 1/2 tsp Salt
- 3/4 - 1 cup Water add gradually, pliable dough, to make a soft
- 2 tbsp Oil for deep frying
For the Bhaji
- 3 medium Potatoes and mashed, boiled, peeled
- 1 small Onion finely chopped
- 1/2 inch Ginger grated
- 1/2 tsp Mustard Seeds
- 7-8 Curry Leaves fresh
- 1/4 tsp Turmeric Powder
- 1/2 tsp Chili Powder adjust to your spice preference, red
- 1/2 tsp Salt to taste
- 1/2 cup Coriander chopped, for garnish, fresh
- 1 tbsp Oil for cooking the bhaji
Instructions
Prepare the Puri Dough
- Knead a soft dough using wheat flour, salt, and water. Cover and let it rest for at least 30 minutes.
Make the Puris
- Roll out small circles of dough. Use a cookie cutter or small bowl to create even shapes. Deep fry in hot oil until golden brown and puffed up. Drain on paper towels.
Prepare the Bhaji
- Heat oil in a pan over low heat. Add mustard seeds and let them splutter.
- Add grated ginger and finely chopped onions. Sauté until the onions soften.
- Stir in curry leaves, turmeric powder, red chili powder, and salt.
- Add the mashed potatoes and mix well. Cook for about 5 minutes, stirring occasionally, until heated through.
