Ingredients
For the Noodle Base
- 2 packages Yippee Noodles or similar instant noodle brand; you may use 2 regular noodle packs instead
- 2 packets Yippee Noodle Seasoning or equivalent seasoning from your chosen noodle brand
- 2 large Eggs
For the Toppings
- 1 medium Onion
- 1 medium Tomato
- 1 tbsp Olive Oil
- 1/2 tsp Italian Seasoning a mix of dried rosemary, and thyme, oregano
- 1 cup Mozzarella Cheese shredded
- 3 tbsp Tomato Sauce
- 1.5 tsp Salt or to taste
- 1 tsp Pepper black, optional
Instructions
Prepare the Ingredients
- Chop the onion and tomato. Shred the mozzarella cheese. Beat the eggs with a pinch of salt.
Cook the Noodles
- Boil water, add the Yippee Noodles, and cook according to package directions. Drain, rinse with cold water, and set aside.
Sauté Aromatics
- Heat olive oil in a pan. Add the chopped onion and sauté for 1 minute. Stir in the Italian seasoning and cook for another minute until fragrant.
Assemble the Noodle Pizza
- Preheat oven to 350°F (175°C). Lightly grease a baking sheet. Spread the cooked noodles evenly on the baking sheet.
Add the Egg Wash
- Gently brush the beaten egg mixture over the noodles to bind them together.
Layer the Toppings
- Spread the tomato sauce evenly over the noodles. Sprinkle the sautéed onion mixture over the sauce. Arrange the tomato slices on top.
