Ingredients
Dough
- 2 1/2 cup All-Purpose Flour
- 2 tsp Sugar
- 2 tsp Active Yeast dry
- 1/2 tsp Salt or to taste
- 1 cup Water warm
- 1 tbsp Vegetable Oil
Filling
- 1 cup Bambino Noodles cooked and rinsed
- 1 tsp Sugar
- 2 tsp Soy Sauce
- 1/4 tsp Pepper black, ground
- 1 tsp Sesame Oil
- 1/4 cup Spring Onions finely chopped
- 1/4 cup Carrot finely chopped
- 1/4 cup Corn kernels, sweet
- 1 cup Prawns and chopped, deveined, peeled
- 1 medium Onion finely chopped
- 2 clove Garlic minced
- 1 medium Chili finely chopped (optional), green
- 1 1/2 tsp Salt or to taste
- 2 tbsp Cooking Oil for frying
Instructions
Prepare the Dough
- In a large bowl, combine warm water, sugar, and yeast. Let stand for 5-10 minutes until foamy. Add salt, oil, and flour. Knead until smooth and elastic. Place in a lightly oiled bowl, cover, and let rise in a warm place for 1.5-2 hours, or until doubled in size.
Cook the Noodles
- Bring a pot of salted water to a boil. Add bambino noodles and cook according to package directions. Drain and rinse with cold water to prevent sticking.
Prepare the Prawn Filling
- Heat 1 tablespoon of cooking oil in a pan over medium heat. Sauté minced garlic and green chili (if using) for a few seconds. Add prawns and cook until pink and opaque. Stir in soy sauce, sugar, black pepper, and salt. Add cooked noodles, sesame oil, spring onions, carrots, and sweet corn. Mix well.
Assemble and Fry the Hotteok
- Lightly oil your hands to prevent sticking. Take a portion of the dough and flatten into a circle. Place a spoonful of the prawn filling in the center. Seal the edges tightly, pinching to form a ball. Gently flatten into a disc.
Cook the Hotteok
- Heat remaining oil in a large skillet over medium heat. Place the hotteok in the skillet, sealed side down. Cook for 2-3 minutes per side, or until golden brown and crispy. Use a spatula to press gently while cooking for even browning.
Serve
- Drain excess oil on a wire rack. Serve hot and enjoy!
