Instructions

Prepare the Dough

  • In a large bowl, combine warm water, sugar, and yeast. Let stand for 5-10 minutes until foamy. Add salt, oil, and flour. Knead until smooth and elastic. Place in a lightly oiled bowl, cover, and let rise in a warm place for 1.5-2 hours, or until doubled in size.

Cook the Noodles

  • Bring a pot of salted water to a boil. Add bambino noodles and cook according to package directions. Drain and rinse with cold water to prevent sticking.

Prepare the Prawn Filling

  • Heat 1 tablespoon of cooking oil in a pan over medium heat. Sauté minced garlic and green chili (if using) for a few seconds. Add prawns and cook until pink and opaque. Stir in soy sauce, sugar, black pepper, and salt. Add cooked noodles, sesame oil, spring onions, carrots, and sweet corn. Mix well.

Assemble and Fry the Hotteok

  • Lightly oil your hands to prevent sticking. Take a portion of the dough and flatten into a circle. Place a spoonful of the prawn filling in the center. Seal the edges tightly, pinching to form a ball. Gently flatten into a disc.

Cook the Hotteok

  • Heat remaining oil in a large skillet over medium heat. Place the hotteok in the skillet, sealed side down. Cook for 2-3 minutes per side, or until golden brown and crispy. Use a spatula to press gently while cooking for even browning.

Serve

  • Drain excess oil on a wire rack. Serve hot and enjoy!

Recipe Notes

Expert Tips for Perfect Savory Prawn & Noodle Hotteok

  • For extra flavor, marinate the prawns in a mixture of soy sauce, ginger, and garlic for 30 minutes before cooking.
  • If your dough is too sticky, add a little more flour, 1 tablespoon at a time, until it's manageable.
  • Don't overfill the hotteok; otherwise, the filling might leak out during cooking.
  • Serve immediately for the best texture and flavor. These are best enjoyed fresh!
