Instructions

  • In a large bowl, combine the refined flour, whole wheat flour, melted butter (or ghee), and salt. Gradually add ice water, mixing until a tight dough forms. Kneading for a few minutes will develop gluten and create a more pliable dough. Cover the dough and let it rest for 30 minutes. This allows the gluten to relax, resulting in a more tender crust.
  • While the dough rests, prepare the toppings. Heat the oil in a pan over medium heat. Add the chopped onions, tomatoes, and bell pepper. Sauté until softened, about 5-7 minutes. Add the turmeric powder, salt, oregano, red pepper flakes, and tomato ketchup. Cook for another 2-3 minutes, allowing the flavors to meld. Set aside.
  • Preheat oven to 350°F (175°C). Lightly grease a muffin tin. Divide the rested dough into small portions. Roll each portion into a ball and press it into the muffin cups, forming a small well in the center. Trim any excess dough. Prick the bottom of each cup with a fork. This prevents the dough from puffing up during baking.
  • Par-bake the pizza cups for 10-12 minutes. This initial baking sets the crust and prevents it from becoming soggy from the toppings.
  • Remove the par-baked pizza cups from the oven. Fill each cup with the prepared vegetable topping. Sprinkle generously with grated cheese. Return the pizza cups to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly and the crust is golden brown.

Recipe Notes

Good To Know

  • Customize the filling with your favorite ingredients, such as mushrooms, paneer, olives, or chicken.
  • For extra tang, add finely chopped pickled jalapeños or banana peppers to the filling.
  • For a vegan version, use plant-based butter and either omit the cheese or substitute with vegan cheese shreds. Load up on seasoned sautéed veggies for a satisfying dairy-free snack.
  • Experiment with international flavors by using pesto, barbecue sauce, or even spicy chutney instead of traditional pizza sauce.

Expert Tips

  • Use a muffin tin with larger cups for more filling space, or mini muffin tins for bite-sized appetizers.
  • Pre-bake the pizza cups for a crispier crust before adding toppings and finishing in the oven or air fryer.
  • Brush the edges of the cups with garlic butter or olive oil before baking for added flavor and color.

Storage Instructions

  • If making ahead, bake the pizza cups until just lightly golden, let them cool, and store in an airtight container. Reheat in an oven or air fryer for 3-5 minutes to restore crispiness before serving.
