Ingredients
For the Tempering
- 2 tsp Ghee
- 1/2 tsp Mustard Seeds rai
- 1 tbsp Split Chickpea split chickpeas
- 2 Chilies finely chopped, green
- 1 Curry Leaf chopped
- 1 pinch Asafoetida hing
For the Idli Batter
- 1 cup Rolled Oats
- 1/2 cup Semolina rava or upma rava
- 1 cup Yogurt curd
- 1 Carrot grated
- 1/4 cup Coriander dhania, chopped
- 1/2 tsp Eno Fruit Salt
- 1/2 cup Water as needed, or more
- 1.5 tsp Salt or to taste
- 10 Cashews broken pieces, optional
Instructions
Prepare the Tempering
- Heat oil in a pan. Add mustard seeds and let them splutter. Add chana dal and sauté until golden brown. Add green chilies, curry leaves, and asafoetida. Sauté for a few seconds and set aside.
Prepare the Oats
- Dry roast the oats until fragrant and lightly golden. Grind into a fine powder, similar in consistency to semolina.
Roast the Semolina
- In the same pan, dry roast the semolina until lightly browned.
Combine Ingredients
- In a large bowl, combine the oat powder, roasted semolina, prepared tempering, grated carrots, and chopped coriander. Mix well.
Make the Batter
- Add the yogurt and salt to the mixture. Add water gradually to achieve a slightly thinner consistency than traditional idli batter. Let the batter rest for 10-15 minutes.
Add Eno and Steam
- Add the Eno fruit salt to the batter and mix gently. Grease idli molds with oil and fill them with the batter.
Steam the Idlis
- Steam the idlis for 13-15 minutes, or until cooked through. Serve warm with your favorite chutney.
Serve
- Serve the fluffy Instant Oats Idlis hot with chutney of your choice (onion-tomato chutney is recommended).
