Prepare the Tempering

  • Heat oil in a pan. Add mustard seeds and let them splutter. Add chana dal and sauté until golden brown. Add green chilies, curry leaves, and asafoetida. Sauté for a few seconds and set aside.

Prepare the Oats

  • Dry roast the oats until fragrant and lightly golden. Grind into a fine powder, similar in consistency to semolina.

Roast the Semolina

  • In the same pan, dry roast the semolina until lightly browned.

Combine Ingredients

  • In a large bowl, combine the oat powder, roasted semolina, prepared tempering, grated carrots, and chopped coriander. Mix well.

Make the Batter

  • Add the yogurt and salt to the mixture. Add water gradually to achieve a slightly thinner consistency than traditional idli batter. Let the batter rest for 10-15 minutes.

Add Eno and Steam

  • Add the Eno fruit salt to the batter and mix gently. Grease idli molds with oil and fill them with the batter.

Steam the Idlis

  • Steam the idlis for 13-15 minutes, or until cooked through. Serve warm with your favorite chutney.

Serve

  • Serve the fluffy Instant Oats Idlis hot with chutney of your choice (onion-tomato chutney is recommended).
