Ingredients
Dough
- 1 cup Whole Wheat Flour whole
- 0.75 tsp Active Yeast dry
- 0.75 tsp Sugar
- 1.5 tsp Salt
- 0.5 cup Water
- 0.5 cup Milk
- 2 Tbsp Olive Oil
- 1-2 Tbsp Milk for brushing
Instructions
- In a bowl, combine the warm water and milk. Add sugar and yeast. Let it sit for about 10 minutes until foamy. This activates the yeast and ensures a well-risen dough.
- In a large bowl, whisk together the whole wheat flour and salt.
- Add the yeast mixture to the dry ingredients and mix until a shaggy dough forms. Add the olive oil and knead for 12-15 minutes until smooth and elastic. If the dough is too dry, add 1-2 tablespoons of milk.
- Place the dough in an oiled bowl, cover with plastic wrap, and let it rise in a warm place for 1-2 hours, or until doubled in size.
- While the dough is rising, prepare the garlic herb butter. Melt the butter in a small saucepan. Add the minced garlic and sauté for about 30 seconds until fragrant. Stir in the chopped cilantro and set aside.
- Preheat oven to 350°F (175°C).
- Gently punch down the risen dough and divide it into 18-19 equal-sized balls. Roll each ball into a 2-3 inch circle.
- Arrange the dough circles in a sunflower pattern on a greased baking sheet. Place one circle in the center and arrange six around it, then the remaining circles around the outer ring.
- Let the assembled bread rise for another 30 minutes.
- Brush the bread with milk and bake for 12-15 minutes. Increase the oven temperature to 400°F (200°C) for the last 2-4 minutes to brown the top.
- Remove from the oven and brush with melted butter for a beautiful shine. Serve warm and enjoy!
Recipe Notes
Good To Know
- Ovens can behave erratically, so keep an eye on the bread at all times.
- You can add grated cheese to the dough for a garlic-cheese flavor.
- For a more pronounced garlic flavor, roast the garlic cloves before incorporating them into the dough or brushing on top.
- If you want a gooey, cheesy touch, sprinkle shredded mozzarella or cheddar between the petals before the final rise.
- To ensure the sunflower shape holds, use a round baking dish and arrange the dough balls with a small bowl or ramekin in the center. Remove the bowl before baking.
Expert Tips
- Experiment with different herbs and spices in the dough, such as rosemary, thyme, or oregano.
- For a richer flavor, use milk or buttermilk instead of water when making the dough.
- Brushing the baked bread with melted butter or garlic-infused oil immediately after it comes out of the oven adds extra flavor and keeps the crust soft.
Storage Instructions
- This bread stays fresh for up to two days when wrapped in a clean kitchen towel and stored in an airtight container.
- Gently reheat in the oven to revive its softness before serving.
