Instructions

Prepare the Potato Filling

  • Heat 1 tablespoon of oil in a pan. Add cumin seeds and let them splutter. Add chopped ginger and sauté for 30 seconds. Add peas, potatoes, salt, red chili powder, coriander powder, and amchur powder. Cook for 5-7 minutes, mashing the potatoes slightly to create a soft mixture. Let cool completely.

Make the Batter

  • In a bowl, whisk together cornflour, rice flour, and a pinch of salt with enough water to create a thin, smooth batter.

Assemble and Shape the Tikkis

  • Lightly moisten each bread slice. Place a spoonful of the potato mixture in the center, shape it into a small patty or tikki, and flatten slightly. Refrigerate for at least 15 minutes to firm up.

Fry the Tikkis

  • Heat 2-3 tablespoons of oil in a pan over medium heat. Dip each tikki in the batter, ensuring it’s fully coated. Carefully place the tikkis in the hot oil and shallow fry until golden brown and crispy on both sides.

Garnish and Serve

  • Sprinkle sesame seeds on top of the cooked tikkis. Serve hot with your favorite chutney or dipping sauce.

Recipe Notes

Expert Tips for the Perfect Crispy Potato and Pea Tikkis

  • For extra crispy tikkis, you can double-dip them in the batter.
  • Don't overcrowd the pan while frying; fry in batches to ensure even browning and crispiness.
  • Adjust the amount of red chili powder to your preference. You can add a pinch of garam masala for a deeper, more complex flavor.
  • If you don't have amchur powder, you can substitute it with a little lemon juice for a tangy twist.
