Ingredients
- 11/2 cup Gram flour gramflour 11/2 cup
- 2 tsp Chili powder red
- 1/2 tsp Turmeric powder haldi
- 2 tsp Coriander dhania
- 1 tsp Mango powder dry
- 1 tsp Garam masala
- 1 tsp Chaat masala
- 2 tsp Coriander seeds
- 6 Garlic
- 1.5 tsp Salt or as per taste
- Oil as required
- 2 cup All-purpose flour maida
Instructions
Prepare the Dough
- Combine all-purpose flour, oil, salt, and water in a bowl. Knead into a smooth, soft dough. Cover and let it rest for at least 15 minutes.
Prepare the Filling
- Heat oil in a pan. Add coriander seeds and sauté until fragrant. Add minced garlic and sauté for a minute. Add gram flour and roast, stirring constantly, until lightly browned. Remove from heat and let it cool.
Combine Filling Ingredients
- Once the roasted gram flour has cooled, add red chili powder, turmeric powder, coriander powder, dry mango powder, garam masala, chaat masala, and salt. Mix well to combine all the spices.
Assemble the Kachoris
- Roll out small portions of the dough into thin circles. Place a spoonful of the prepared filling in the center of each circle. Gently bring the edges of the dough together and pinch to seal, forming a half-moon or ball shape.
Fry the Kachoris
- Heat oil in a deep pan or kadai for deep frying. Fry the kachoris in batches, ensuring not to overcrowd the pan. Fry over medium heat until they are golden brown and crispy on both sides.
