Ingredients
Base
- 1 can Coconut Milk thick
- 1 tbsp Honey or maple syrup
- 1 tbsp Chia Seeds
Fruit
- 1 cup Fruit chopped if large, fresh, of your choice
Instructions
- In a small bowl, combine the full-fat coconut milk and honey (or maple syrup). Whisk until well combined, ensuring any thick coconut cream from the top of the can is fully incorporated.
- Add the chia seeds and stir thoroughly. Let the mixture sit for about 30 minutes, stirring occasionally, to allow the chia seeds to absorb the liquid and expand, creating a pudding-like consistency.
- Add a small amount of the coconut chia pudding mixture to the bottom of each popsicle mold.
- Distribute some of the chopped fresh fruit on top of the base layer in the molds.
- Layer the remaining coconut chia pudding and fruit in the popsicle molds, alternating between the two until the molds are almost full.
- Insert popsicle sticks into the center of each mold. They should stand upright on their own.
- Freeze the popsicles for several hours, or until solid.
- To release the popsicles from the molds, briefly run the molds under warm water for about 15 seconds. This will gently loosen the popsicles, making them easy to remove.
