Instructions

  • Create the mango mixture by blending the mango, sugar, and milk until smooth. Taste and adjust sweetness as needed.
  • In a separate bowl, combine the coconut milk and sugar. Stir until the sugar is fully dissolved.
  • For layered popsicles, pour a small amount of mango mixture into each popsicle mold. Freeze for 15 minutes to allow a thin layer to set. This prevents the layers from mixing completely.
  • Add a layer of the coconut milk mixture to each mold and freeze again for 15 minutes.
  • Repeat the layering process with the remaining mango and coconut mixtures until the molds are full.
  • For a simpler approach, combine the mango and coconut mixtures in a bowl and pour into the popsicle molds.
  • Insert popsicle sticks and freeze for at least 6 hours, or preferably overnight, until solid.
  • To unmold the popsicles, briefly run the molds under warm water. Gently pull on the sticks to release the popsicles.

Recipe Notes

Good To Know

  • For a layered look and a burst of flavor, try blending some of the mango separately and swirling it into the coconut-mango mixture before pouring into molds, creating beautiful mango ribbons throughout the popsicle.
  • If you prefer a smoother texture, strain the blended mango puree through a fine sieve before mixing it with the coconut milk to remove any fibrous bits.
  • For a fun Indian twist, add a pinch of cardamom powder or a few saffron strands to the mixture for extra aroma and depth of flavor.
  • Unmold popsicles easily by briefly dipping the molds in warm water for 15-20 seconds, which helps release them without cracking.

Expert Tips

  • For creamier popsicles, use full-fat coconut milk.
  • If you don't have popsicle molds, you can use small paper cups and wooden sticks.
  • Get creative with toppings! Once the popsicles are frozen, dip them in melted chocolate or sprinkle with chopped nuts or shredded coconut.

Storage Instructions

  • Store the popsicles in an airtight container or freezer bag in the freezer for up to 2 months.
