Ingredients
Fruits
- 6 Strawberries
- 1 Orange medium
- 2 Pineapple Chunks canned
- 2 Peach Chunks canned
- 4 Cherries canned
- 1-2 Seasonal Fruits fresh, for garnish (optional)
Mix-Ins & Garnish
- 6 Marshmallows
- 2 Tbsp Coconut freshly, grated
- 2 Tbsp Walnuts roughly chopped, toasted
- 1 tsp Sugar castor or superfine (optional)
- 1 Persimmon for garnish
- ½ cup Pomegranate Seeds for garnish
- 2 Mint Leaves for garnish
Instructions
Prepare the Fruit
- Dice the orange segments and strawberries into 1-inch cubes. Place them in a medium-sized bowl.
- Add the pineapple chunks, peach chunks, and cherries to the bowl. If using other fruits, ensure they are cut into similar sizes.
Combine and Mix
- Add the marshmallows and freshly grated coconut to the fruit mixture.
- In a separate bowl, lightly beat the whipped cream with a hand whisk until soft peaks form. This adds air and creates a light, fluffy texture.
- Gently fold the whipped cream and yogurt into the fruit mixture. Sour cream or room-temperature yogurt can be substituted for plain yogurt.
- Mix everything well. Taste and add sugar if desired, depending on the sweetness of the fruit.
Assemble and Chill
- If desired, layer the bottom of serving glasses with chopped persimmon and pomegranate seeds. This adds a beautiful presentation.
- Spoon the Ambrosia Salad over the persimmon layer. Garnish with additional persimmon, pomegranate seeds, and any reserved fruits like pineapple, peach, or cherry.
- Add a few mint leaves as a final touch of freshness.
- Chill in the refrigerator for at least one hour before serving. This allows the flavors to meld and the salad to become refreshingly cool.
Recipe Notes
Good To Know
- For a healthier option, replace sour cream with two-day-old sour curd (yogurt).
- Instead of whipped cream, use Greek yogurt for a thicker, lower-calorie alternative.
- Substitute canned fruits with fresh, seasonal fruits.
- If needed, add extra sweetness with honey or agave nectar instead of sugar.
Expert Tips
- For a richer flavor, use full-fat Greek yogurt.
- Adjust the sweetness according to the sweetness of the fruit used.
- Gently fold in the yogurt and fruit to avoid deflating the mixture.
Storage Instructions
- Store leftover salad in an airtight container in the refrigerator for up to 2 days.
- The texture may change slightly upon refrigeration, but the flavor will remain delicious.
