Ingredients
Fruit
- 1 cup Kiwi peeled and sliced
- 2 cup Watermelon cubed or sliced
- 1 cup Blueberries
Liquid
- 2 cup Coconut Water
Equipment
- 6 Popsicle Molds or similar freezer-safe molds
- 6 Popsicle Sticks
Instructions
Prepare the Fruit
- Press the watermelon and kiwi slices into the bottom of each popsicle mold. Use a popsicle stick to gently press the fruit against the sides of the mold to create an even layer.
Add Blueberries and Fill
- Add blueberries to fill the gaps between the watermelon and kiwi. Add as much fruit as you can fit into the mold, continuing to press it against the sides for a compact arrangement.
Add Coconut Water
- Fill the molds with coconut water, leaving about ½ inch of space at the top for the liquid to expand as it freezes. This prevents spills and ensures your popsicles are fully formed.
Freeze
- Insert the popsicle sticks into each mold and place them in the freezer. Freeze overnight, or for at least 6-8 hours, until solid.
Release Popsicles
- To release the popsicles, run the molds under warm water for a few seconds. Gently pull the popsicles out of the molds. If they are difficult to remove, let them sit at room temperature for a few minutes.
Enjoy!
- Enjoy your refreshing homemade fruit popsicles immediately or store them in the freezer for later.
Recipe Notes
Expert Tips for the Perfect Fruit Popsicles
- For a sweeter popsicle, add a touch of honey or agave nectar to the coconut water.
- Experiment with different fruits! Strawberries, mango, raspberries, and peaches all work well.
- If your fruit is particularly juicy, you might need to reduce the amount of coconut water to prevent overflow during freezing.
- For easy cleanup, lightly grease your popsicle molds with coconut oil before adding the fruit and coconut water.
