Ingredients
For the Sushi Rice
- 1 cup Sushi Rice
- 1 1/2 cup Water
- 1 tbsp Sugar
- 1/2 tsp Salt
- 2 tbsp Rice Vinegar
For the Filling
- 1 Mango peeled and thinly sliced, ripe
- 1 Avocados pitted and thinly sliced, ripe
- 100 grams Cream Cheese softened
- 4 Nori Sheets
Optional additions
- 1 tbsp Sesame Seeds for garnish
- Soy Sauce for serving, to taste
- Wasabi for serving, to taste
- Ginger for serving, to taste, pickled
Instructions
Prepare the Sushi Rice
- Cook sushi rice according to package directions, using 1 1/2 cups of water for 1 cup of rice.
- Meanwhile, whisk together rice vinegar, sugar, and salt in a small bowl. Microwave for 15-20 seconds, or until sugar is dissolved.
- Once rice is cooked, transfer to a large bowl and gently fold in the vinegar mixture until well combined and slightly sticky.
Prepare the Filling
- Thinly slice the ripe mango and avocado.
- Soften the cream cheese to room temperature.
Assemble the Sushi Rolls
- Lay a nori sheet on a bamboo sushi rolling mat, shiny side down.
- Spread a thin, even layer of sushi rice over the nori, leaving about 1 inch of space at the top edge.
- Flip the nori sheet over so that the rice side is facing down.
- Place a line of cream cheese, followed by the mango and avocado slices, along the center of the nori.
- Using the bamboo mat, carefully lift the edge of the nori closest to you and begin rolling tightly, tucking in the filling as you go.
- Once rolled, moisten the top edge of the nori with a little water to seal.
Cut and Serve
- Using a sharp knife, cut the sushi roll into 8 equal pieces.
- Garnish with sesame seeds, if desired.
- Serve immediately with soy sauce, wasabi, and pickled ginger.
