Instructions
Prepare the Black Rice
- Soak 1 cup of black rice overnight in 1 1/2 cups of water.
- Steam or cook the soaked rice according to package directions until slightly mushy.
- While the rice is still warm, gently stir in the rice vinegar, soy sauce, honey (or agave), and salt.
- Let the rice cool completely to room temperature.
Prepare the Vegetables and Tofu
- Steam or blanch the carrot and cucumber strips until tender-crisp, about 2-3 minutes. Set aside to cool.
- Press the tofu to remove excess water, then cut into long, thin strips.
- Cut the avocado into long, thin strips.
Assemble the Sushi Rolls
- Lay out a large sheet of plastic wrap or aluminum foil.
- Spread a thin, even layer of the cooled black rice onto the plastic wrap, leaving about 1 1/2 to 2 inches of space at the edges.
- Arrange the tofu, carrot, cucumber, and avocado strips in a line down the center of the rice.
- Gently lift the plastic wrap and use it to tightly roll the sushi, tucking in the sides as you go.
- Once tightly rolled, gently remove the plastic wrap.
Cut and Serve
- Using a very sharp, wet knife, carefully slice the sushi roll into 1 1/2-inch pieces.
- Serve immediately with pickled ginger, wasabi, and extra soy sauce, if desired. Garnish with sesame seeds.
