Ingredients

- 1 cup Spinach chopped
- 1/3 cup Aloe Vera Gel from about 1 large leaf
- 1 Chili green
- 1/2 cup Mint Leaves
- 2 tbsp Coriander freshly chopped
- 1 tsp Ginger grated
Dairy & Liquids
- 1 cup Yogurt yogurt, thick
- 2 cup Water
- 1 tsp Lemon Juice freshly squeezed
Spices & Flavorings
- 1 tsp Cumin Seeds
- 1/2 tsp Asafoetida hing
- 1/2 tsp Chaat Masala
- 1/2 tsp Salt black
- Salt to taste
Fat
- 1 tbsp Ghee
Instructions
- Thoroughly wash the aloe vera leaf. Carefully remove the gel and cut it into pieces. Rinse the gel 5-6 times under cold water to eliminate any bitterness.
- Wash the spinach leaves thoroughly and roughly chop them. In a pan, heat the ghee. Add cumin seeds and asafoetida. Once the seeds sizzle, add the chopped spinach. Sauté for 2-3 minutes until wilted, then set aside.
- In a blender, combine the curd, sautéed spinach, aloe vera gel, green chili, cilantro, mint leaves, ginger, chaat masala, salt, and water. Blend until smooth. This step thoroughly combines the flavors and creates a creamy texture.
- Strain the blended mixture through a fine-mesh sieve to remove any fibrous bits and ensure a smooth buttermilk. This step creates a more refined and enjoyable drinking experience.
- Stir in the black salt and lemon juice. Adjust salt to taste. For the best flavor, chill the buttermilk thoroughly before serving. Pour into glasses and enjoy!
