  • Roughly chop the radish greens, mustard greens, fenugreek leaves, spinach, green gram leaves, and amaranth leaves.

  • Blanch the chopped greens in boiling water for a minute or two. This helps retain their vibrant color and reduces bitterness. Immediately plunge the blanched greens into ice water to stop the cooking process.
  • Once cooled, combine the blanched greens, cilantro, holy basil, curry leaves, and a splash of water in a food processor. Pulse until a smooth paste forms.
