Ingredients
Greens
- 1 bowl Greens (such as spinach, kale, mixed, mustard greens, or chard)
Aromatics and Spices
- 1 Onion chopped
- 1-2 Tomatoes chopped
- 2 in Ginger minced
- 2 Chilies green, slit lengthwise
- 8 clove Garlic minced
- 1 tsp Chili Powder red
- 1 tsp Garam Masala
Other
- 1 Tbsp Corn Flour (or maize flour)
- 1 Tbsp Mustard Oil
- 1-2 tsp Salt to taste
Instructions
- In a large pot, combine the mixed greens, chopped onion, tomatoes, green chilies, minced garlic, and salt. Add enough water to cover the greens. Bring the mixture to a boil.
- Once boiling, reduce the heat and simmer for 15-20 minutes, or until the greens are tender. This allows the flavors to meld and the greens to cook evenly.
- In a small bowl, whisk together the cornstarch with a little water to form a smooth slurry. This will help thicken the saag.
- Add the cornstarch slurry to the pot with the simmering greens. Stir well to combine and cook for another 2-3 minutes, or until the saag has thickened slightly.
- In a separate pan, heat the mustard oil over medium heat. Add the minced ginger and sauté for about 30 seconds until fragrant. This releases the aromatic oils from the ginger.
- Pour the ginger-infused oil over the saag. Stir in the red chili powder and garam masala. The tempering adds a depth of flavor to the dish.
- Taste and adjust seasonings as needed. Serve hot with rice, roti, naan, or your preferred accompaniment.
