  • Blanch the spinach until wilted. Puree it in a blender until smooth. Set aside.

Cook the Paneer

  • Heat 2 tbsp oil in a pan. Fry the paneer cubes until lightly browned. Set aside.

Make the Spice Base

  • Heat 2 tbsp oil in a pan. Add asafoetida (if using). Add the onion paste and sauté until fragrant. Add ginger-garlic paste and sauté for another minute.

Add Spices and Tomatoes

  • Add garam masala, coriander powder, red chili powder, turmeric powder, and crushed black cardamom. Sauté for a minute until fragrant. Add the tomato puree, salt, and cook until the oil separates from the mixture.

Combine and Bake

  • In an oven-safe dish, combine the tomato-spice mixture with the spinach puree. Add the fried paneer cubes. Top with the shredded mozzarella cheese.
  • Bake in a preheated oven at 375°F (190°C) for 10-15 minutes, or until the cheese is melted and bubbly.
