  • 1 large Potato peeled and cut into chunks
  • 3 leaves Lettuce green leaf lettuce
  • 3 tbsp Milk
  • 2 tbsp Butter
  • tsp Salt or to taste
  • Pepper black, to taste

Instructions
 

  • Heat the oil in a pan over medium-low heat. Add the onion and sauté until softened and translucent.
  • Add the chicken and cook until no longer pink, about 5 minutes.
  • Add the apple and carrot. Sauté for 1 minute.
  • Pour in the chicken stock and apple juice. Stir in the mustard paste and fennel seeds. Cover and cook for 10-15 minutes, allowing the flavors to meld.
  • While the chicken mixture simmers, pressure cook the potato for 2-3 whistles, or until tender. Allow the pressure to release naturally.
  • Drain the cooked potato and mash thoroughly.
  • To the mashed potato, add the milk, lettuce, butter, red pepper flakes, salt, and pepper. Mix well to combine.
  • Transfer the chicken, apple, and carrot mixture to a microwave-safe dish. Set aside.
  • In a small bowl, whisk together the cornstarch with a little water to form a slurry. This will help thicken the sauce.
  • Pour the cornstarch slurry into the pan with the remaining cooking liquid. Bring to a boil, stirring constantly to prevent lumps.
  • Cook until the sauce thickens. Pour this thickened sauce over the chicken mixture in the microwave-safe dish.
  • Spread the mashed potato-lettuce topping evenly over the chicken, ensuring it's fully covered.
  • Microwave on high for 5-7 minutes, or until heated through. Check for doneness after 4 minutes. Serve hot with rice or your favorite bread.
