Ingredients

- 150 gm Chicken boneless, cut into bite-sized pieces
- 2 tbsp Oil
- 1 Onion thinly sliced
- 1 Carrot thinly sliced
- 1 cup Chicken Stock or water
- 1 Apple thickly sliced
- 1 cup Apple Juice
- ½ tsp Fennel Seeds (saunf)
- 1 tsp Mustard Paste
- 1 tbsp Corn Flour
- 1½ tsp Salt or to taste
- ½ tbsp Pepper Flakes red
- Pepper black, to taste
Instructions
- Heat the oil in a pan over medium-low heat. Add the onion and sauté until softened and translucent.
- Add the chicken and cook until no longer pink, about 5 minutes.
- Add the apple and carrot. Sauté for 1 minute.
- Pour in the chicken stock and apple juice. Stir in the mustard paste and fennel seeds. Cover and cook for 10-15 minutes, allowing the flavors to meld.
- While the chicken mixture simmers, pressure cook the potato for 2-3 whistles, or until tender. Allow the pressure to release naturally.
- Drain the cooked potato and mash thoroughly.
- To the mashed potato, add the milk, lettuce, butter, red pepper flakes, salt, and pepper. Mix well to combine.
- Transfer the chicken, apple, and carrot mixture to a microwave-safe dish. Set aside.
- In a small bowl, whisk together the cornstarch with a little water to form a slurry. This will help thicken the sauce.
- Pour the cornstarch slurry into the pan with the remaining cooking liquid. Bring to a boil, stirring constantly to prevent lumps.
- Cook until the sauce thickens. Pour this thickened sauce over the chicken mixture in the microwave-safe dish.
- Spread the mashed potato-lettuce topping evenly over the chicken, ensuring it's fully covered.
