Instructions
 

  • Preheat oven to 350°F (175°C). This temperature ensures the potato cooks evenly and becomes fluffy inside.
  • In a small bowl, combine the olive oil and minced garlic.
  • In another small bowl, whisk together the salt, red chili powder, black pepper, and ground cumin.
  • Wash and dry the potato thoroughly. Cut a thin slice off the top and bottom of the potato to create a stable base.
  • Place the potato on a cutting board. Make thin, even slices from top to bottom, stopping just short of cutting all the way through. Aim for about ¼-inch slices. This creates the "blooming" effect.

  • Gently fan out the potato slices. Brush the garlic-infused olive oil generously over the potato, ensuring it gets in between all the slices.

  • Sprinkle the spice mixture evenly over the potato, making sure to season between the slices.
  • Place the chopped spinach in between the potato slices.
