Black And White Roti – Thag Roti, Traditional Bread From Uttarakhand

Black and White Roti is a special preparation of roti by the people in Uttarakhand or Uttaranchal. It is also called thag roti or cheat bread. It is made with wheat flour stuffed with dough of mandua flour. Try out this yummy tasty two flavor roti.

Ingredients
  

  • One Kg of wheat flour
  • 500 gm of mandua flour A cereal only available in the Garhwal region
  • 2 gm or half tsp of ajwain or jeera
  • Water as required
  • Salt
  • White Butter or ghee to serve with roti

Instructions
 

  • Take wheat flour and salt add water and knead it. Keep it separately.
  • Next, take the mandua flour, ajwain, salt and water and knead it. Keep this also separately.
  • Prepare a small ball of the wheat flour and stuff it with the mandua flour dough. Roll it into a round shape like chappati and cook it on a tawa.
  • Serve the preparation with lots of white butter or ghee.
