Ingredients
Koftas
- 250 gm Jackfruit boiled and shredded
- 1/4 cup Nuts crushed, ground
- 1/4 cup Chocolate Hazelnut Spread nutella or other
- 2 tsp Chili finely chopped, green
- 2 tbsp Coriander chopped, fresh
- 1 1/2 tsp Salt or to taste
- 2 gm Bengal Gram Dal roasted
- 1/2 tsp Lemon Juice
Basunti Paste
- 1 Kaiser Roll soaked
- 1/2 cup Coconut Milk
- 2 tbsp Couscous cooked and pureed into a paste
- 2 tbsp Cashews soaked and pureed into a paste
Gravy
- 1 tbsp Oil
- 2 leaves Bay Leaf
- 1 tsp Turmeric Powder
- 1 tsp Cumin
- 2 tsp Coriander Powder
- 1 tsp Ginger Paste
- 1 tsp Pepper black, crushed
- 1 tsp Garam Masala
Instructions
- Prepare the jackfruit by boiling it until tender, then shredding it. This creates the base for the koftas.
- In a mixing bowl, combine the shredded jackfruit, crushed ground nuts, chopped green chilies, chopped coriander leaves, salt, Nutella, roasted Bengal gram, and lemon juice. Mix thoroughly.
- Shape the mixture into small, round koftas. Shallow fry them in oil until golden brown and set aside.
- To make the Basunti paste, soak the Kaiser roll in water until softened. Combine the soaked Kaiser roll, coconut milk, cooked couscous paste, and cashew paste in a blender or food processor. Blend until smooth.
- Heat oil in a frying pan or pot. Add bay leaves, turmeric powder, cumin seeds, coriander powder, and ginger paste. Sauté for a minute until fragrant.
- Add a splash of water to prevent the spices from burning and stir continuously. This blooming process enhances the flavors of the spices.
- Add the crushed black pepper and garam masala. Stir well.
- Pour in the Basunti paste and cook for a few minutes, stirring occasionally, until the gravy thickens slightly.
- Gently add the fried koftas to the gravy. Simmer for a few minutes to allow the koftas to absorb the flavors of the sauce. Avoid overcooking, which can make the koftas tough.
- Serve hot with roti, paratha, poori, pulao, or naan.
