Ingredients
For the Koftas
- 1 cup Cottage Cheese grated
- 1 cup Potato boiled and grated
- 2 Tbsp All-Purpose Flour
- 1 1/2 tsp Salt or to taste
For the Stuffing
- 2 Tbsp Cashews crushed
- 1 Tbsp Raisins
- 1 Tbsp Cottage Cheese grated
For the Gravy
- 1 Onion chopped, medium
- 4 clove Garlic
- 1 in Ginger
- 1 tsp Chili Powder red
- 1 tsp Kashmiri Chili Powder
- 1 tsp Coriander Powder
- 1/2 tsp Turmeric Powder
- 1 Cardamom black, ground
- 1 Cardamom green, ground
- 1 in Cinnamon Stick
- 2 Peppercorns black
- 1 Mace
- 2 Tbsp Yogurt
- 1/2 cup Milk
- 2 Tbsp Heavy Cream
- 1/2 cup Tomato Purée
- 1 cup Oil for frying
- 1 Tbsp Coriander chopped, for garnish
- 1 1/2 tsp Salt or to taste
Instructions
- In a large bowl, combine the grated paneer, grated potato, all-purpose flour, and salt. Mix well to form a smooth dough.
- In a separate bowl, prepare the stuffing by combining the crushed cashews, raisins, and grated paneer.
- Divide the kofta dough into equal-sized balls. Flatten each ball slightly in your palm, place a spoonful of the stuffing in the center, and gently seal the edges, forming a smooth ball again.
- Heat the oil in a deep pan over medium heat. Gently fry the koftas in batches until golden brown and cooked through. This creates a crispy exterior and ensures the inside is cooked evenly. Remove the koftas and set them aside.
- To prepare the gravy, combine the chopped onion, garlic, ginger, black peppercorns, cloves, mace, cinnamon stick, black cardamom, green cardamom, red chili powder, Kashmiri chili powder, coriander powder, and turmeric powder in a blender. Add a little water and blend into a smooth paste.
- In a separate pan or pot, heat the remaining oil over medium heat. Add the spice paste and sauté until fragrant and the oil begins to separate from the spices. This process, called blooming, intensifies the flavors of the spices.
- Add the milk and heavy cream to the spice paste, stirring well to combine. Then, add the tomato purée and yogurt, mixing thoroughly.
- Add 1/2 cup of water to the gravy, bring to a simmer, and cover. Cook for a few minutes, allowing the gravy to thicken slightly.
- Gently place the fried koftas into the gravy. Simmer for a few more minutes to allow the koftas to absorb the flavors of the gravy. Garnish with fresh cilantro and serve hot with naan, roti, or steamed rice.
