Prepare the Kofta Dough

  • Combine grated paneer, grated boiled potato, all-purpose flour, salt, and optional black pepper in a bowl. Mix well to form a smooth, pliable dough.

Make the Kofta Stuffing

  • In a small bowl, combine crushed cashews, raisins, and grated paneer. Mix well. This is your kofta stuffing.

Shape the Koftas

  • Divide the dough into small, equal-sized balls. Roll each ball gently between your palms to create smooth, round koftas.

Fill and Fry the Koftas

  • Make a small indentation in the center of each kofta. Fill with about 1/4 teaspoon of the stuffing. Gently seal the opening to enclose the stuffing.
  • Heat vegetable oil in a deep pan or kadai over medium heat. Deep fry the koftas until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Gravy

  • In a blender, combine chopped onion, garlic, ginger, black peppercorns, cloves, mace, cinnamon stick, black and green cardamom, red chili powder, Kashmiri chili powder, coriander powder, and turmeric powder. Add a little water and blend into a smooth paste.

Cook the Gravy

  • Heat ghee (or vegetable oil) in a pan or kadai over medium heat. Add the spice paste and sauté for 2-3 minutes, until fragrant and the oil separates from the spices.
  • Add milk and cream, and stir well. Simmer for a minute.
  • Add tomato puree and yogurt. Mix well and cook for another 2-3 minutes, stirring continuously.
  • Add 1/2 cup of water, stir, cover and simmer for 5-7 minutes to create a semi-thick gravy. Adjust seasoning with salt.

Combine and Serve

  • Carefully add the fried koftas to the gravy. Simmer gently for a few minutes to allow the flavors to meld.
  • Garnish with freshly chopped coriander leaves.
  • Serve hot with naan or basmati rice.

  • For extra soft koftas, add a tablespoon of cream cheese to the kofta dough.
  • Don't overcrowd the pan when frying the koftas. Fry them in batches to ensure they brown evenly.
