Instructions

  • Boil the taro root until tender. Drain and mash thoroughly.
  • In a bowl, combine the mashed taro, ginger-garlic paste, curry powder, and salt. Mix well.
  • Add the ground nuts, chopped raisins, green chilies, and cilantro. Mix thoroughly.
  • Stir in the bread crumbs and corn flour. This helps bind the koftas and create a crispy exterior.
  • Lightly grease your palms with oil and shape the mixture into small, round balls.
  • Heat oil in a deep pan over medium heat. Fry the koftas until golden brown and crispy. This enhances their flavor and texture.

  • Remove the koftas and place them on a paper towel-lined plate to drain excess oil.
  • In a pot, boil the chopped onions, tomatoes, cashews, cloves, cinnamon stick, and green cardamoms for about 5 minutes. This softens the ingredients and infuses the gravy with their flavors.
  • Once cooled, blend the boiled ingredients into a smooth puree.
  • Heat oil in a pan. Add the cloves and cinnamon stick. Let them splutter to release their aroma.
  • Add the finely chopped onion and sauté until translucent. Then, add the ginger-garlic paste and sauté for a minute.
  • Pour the blended puree into the pan. Bring to a simmer and cook for a few minutes.
  • Add the chili powder, curry powder, garam masala, sugar, and salt. Simmer until the gravy thickens slightly and the oil starts to separate. This indicates that the spices are cooked and the flavors have melded.
  • Stir in the crushed kasuri methi and heavy cream. This adds a final layer of flavor and richness.
  • Gently add the fried arbi koftas to the gravy. Garnish with fresh cilantro and a dollop of cream.

Recipe Notes

Expert Tips

  • For extra crispy koftas, you can shallow fry them before adding them to the curry.
  • Adjust the spice level by adding more or less chili powder to the kofta mixture or the curry sauce.
  • If you're short on time, you can use pre-made koftas, but homemade ones always taste best!

Storage Instructions

  • Store leftover kofta curry in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently on the stovetop or in the microwave.
