Ingredients
For the Payasam
- 1 cup Poha also known as poha. use thin variety., aval, beaten rice
- 4 cups Milk whole milk is recommended for best flavor and creaminess.
- 1/2 cup Sugar adjust to your preferred sweetness.
- 3 tablespoons Clarified Butter
- 1/2 teaspoon Cardamom Powder finely ground cardamom pods; add more if desired.
Instructions
Prepare the Beaten Rice
- Fry 1 cup of beaten rice in 1 tablespoon of ghee for 2-3 minutes, until lightly golden. Set aside.
Roast Nuts and Raisins
- In a separate pan, dry-roast the cashews until lightly browned. In the same pan, toast the raisins briefly. Set aside.
Cook the Payasam
- In a medium saucepan, heat the remaining 2 tablespoons of ghee. Add the fried beaten rice and sauté for a minute. Pour in the milk and bring to a gentle simmer. Reduce heat to low, cover, and let it simmer for 15-20 minutes, stirring occasionally to prevent sticking.
Sweeten and Finish
- Stir in the sugar and cardamom powder. Continue to simmer until the payasam thickens slightly and turns a light pinkish-brown (about 5-7 more minutes). Remove from heat. Stir in the roasted cashews and raisins. Cover and let it sit for 5 minutes to allow the flavors to meld.

- Serve the Aval Payasam warm or at room temperature. Enjoy!
