Instructions

Prepare the Beaten Rice

  • Fry 1 cup of beaten rice in 1 tablespoon of ghee for 2-3 minutes, until lightly golden. Set aside.

Roast Nuts and Raisins

  • In a separate pan, dry-roast the cashews until lightly browned. In the same pan, toast the raisins briefly. Set aside.

Cook the Payasam

  • In a medium saucepan, heat the remaining 2 tablespoons of ghee. Add the fried beaten rice and sauté for a minute. Pour in the milk and bring to a gentle simmer. Reduce heat to low, cover, and let it simmer for 15-20 minutes, stirring occasionally to prevent sticking.

Sweeten and Finish

  • Stir in the sugar and cardamom powder. Continue to simmer until the payasam thickens slightly and turns a light pinkish-brown (about 5-7 more minutes). Remove from heat. Stir in the roasted cashews and raisins. Cover and let it sit for 5 minutes to allow the flavors to meld.

Serve

  • Serve the Aval Payasam warm or at room temperature. Enjoy!

Expert Tips for the Best Aval Payasam

  • For extra creaminess, use full-fat coconut milk in addition to or instead of cow's milk.
  • If you prefer a less sweet payasam, reduce the amount of sugar to 1/4 cup or adjust to taste.
  • To enhance the aroma, add a pinch of saffron strands along with the milk.
  • Feel free to add other nuts and dried fruits like pistachios, almonds, or chopped dates for added texture and flavor.
