Vermicelli & Nuts

  • 1 cup Vermicelli semiya, roasted lightly, thin
  • 1/2 cup Almonds slivered or slivered and roughly chopped

Preparing the Vermicelli

  • Heat the ghee in a saucepan over medium heat. Add the almonds and sauté for 1-2 minutes until lightly browned. Add the roasted vermicelli and fry for another 2-3 minutes, stirring frequently, until it turns light golden brown.

Adding Milk and Simmering

  • Pour in 1 cup of milk and cook, stirring occasionally, until the vermicelli is soft and has absorbed most of the milk. This will take approximately 5-7 minutes.

Creaming and Sweetening

  • Add the remaining 1 cup of milk and the sugar. Reduce the heat to low and simmer for 10-15 minutes, stirring occasionally, until the payasam thickens and becomes creamy.

Finishing Touches

  • Stir in the cardamom powder and saffron (if using). Cook for another 2-3 minutes, stirring gently, to allow the flavors to blend. Remove from heat.

Serving

  • Serve the Vermicelli Payasam warm or chilled. Garnish with extra slivered almonds or a sprinkle of cardamom powder, if desired.
