Prepare the Poha

  • Wash the poha thoroughly under running water until the water runs clear. Drain completely and set aside. Sprinkle with salt and sugar, mixing gently. Let it sit for a few minutes to soften.

Make the Tempering

  • Heat oil in a pan over medium heat. Add mustard seeds and let them splutter.

Sauté the Vegetables

  • Add curry leaves and green chilies. Sauté for a minute. Add onions and sauté until translucent.

Combine Ingredients

  • Add chopped tomatoes and peas. Sauté for another minute. Add the boiled potatoes and sauté gently.

Add Spices and Poha

  • Stir in the peanuts and turmeric powder. Add the softened poha and mix well. Cover the pan and cook for 2-3 minutes on low heat, stirring once after a minute to avoid sticking.

Rest and Garnish

  • Remove from heat and let the poha rest, covered, for 1-2 minutes to allow the flavors to meld.

Serve

  • Remove the lid, sprinkle with lime juice, chopped coriander, and grated coconut. Gently stir and serve hot with tea or your favorite beverage.
