Prepare the Litti Dough

  • Dissolve salt in water. Add oil to the mixture, then gradually add the whole wheat flour to form a semi-hard dough. Knead well and let it rest for 20 minutes.

Prepare the Litti Stuffing

  • Dry roast cumin, coriander, red chili, and fennel seeds until fragrant. Grind to a coarse powder using a mortar and pestle or spice grinder.
  • Combine the roasted spice powder with roasted chickpea flour (sattu), grated ginger, grated garlic, chopped green chili, salt, and oil. Mix thoroughly to create a stiff paste.

Assemble and Bake the Litti

  • Divide the Litti dough into 35-40g balls. Make 15g balls of the stuffing.
  • Place the stuffing in the center of each Litti ball, seal tightly, and shape into a smooth ball.
  • Bake the Litti in a preheated oven at 180-200°C (350-400°F) for 15-20 minutes, or until golden brown. Alternatively, cook over an open flame (wood fire or charcoal) for 25-30 minutes, turning occasionally.
  • Once cooked, gently break open each Litti and drizzle with ghee.

Prepare the Chokha

  • Roast the eggplant, tomatoes, and green chilies directly over an open flame until the skins are charred. Remove the skins and mash the vegetables.
  • In a separate pan, heat mustard oil. Add cumin seeds and let them splutter. Add chopped onions and cook until softened.
  • Add chopped ginger and green chilies, and cook for another 5 minutes.
  • Stir in the mashed eggplant, tomatoes, and boiled potatoes. Add red chili powder, turmeric powder, salt, and coriander leaves. Simmer for 15 minutes, adding a little water if needed. Finish with lemon juice.

Serve

  • Serve the hot Litti with the Chokha. Enjoy!

Expert Tips for Perfect Litti Chokha

  • For authentic flavor, use roasted chickpea flour (sattu) that is freshly roasted. If not freshly available, then roast the sattu before usage.
  • If you don’t have access to an open flame, baking the Litti in a preheated oven works well. Ensure to prick the Litti with a fork before baking to prevent bursting.
  • Adjust the amount of green chilies according to your spice preference.
  • For extra richness, add a dollop of ghee (clarified butter) to the Chokha before serving.
