  • Coarsely blend the roasted tomatoes, green chilies, and garlic. Do not puree; you want a chunky paste.

Combine and Season

  • Add the tomato-chili paste to the mashed eggplant. Stir in the mustard oil, salt, and chopped coriander. Mix well.
