Ingredients
For the Baati Dough
- 1 cup Whole Wheat Flour whole
- 1 tbsp Ghee
- 1 tsp Carom Seeds
- Salt to taste
For the Sattu Filling
- ½ cup Sattu
- 1 tsp Chili Powder
- 1 tsp Pickle Oil
- Chilies chopped, green
- Salt to taste
Instructions
- In a large bowl, combine the whole wheat flour, ghee, carom seeds, and salt.
- Gradually add water and knead until a smooth and firm dough forms. This will take about 5-7 minutes.
- Cover the dough and let it rest for 10 minutes. This allows the gluten to relax, resulting in softer Baati.
- In a separate bowl, prepare the Sattu filling by combining the Sattu flour, chili powder, pickle oil, chopped green chilies, and salt.
- Mix the filling ingredients thoroughly and set aside.
- Divide the rested dough into equal-sized portions.
- Roll each portion into a ball, then flatten slightly.
- Place a spoonful of the Sattu filling in the center of each flattened dough circle.
- Bring the edges of the dough together to enclose the filling completely, forming a ball.
- Preheat the clay oven. If using a conventional oven, preheat to 400°F (200°C).
- Line the oven with banana leaves, if available, to create a smoky flavor. This step is traditional in Bihar.
- Place the filled Baati dough balls in the preheated oven.
- Bake for about 20-25 minutes, turning occasionally, until the Baati are golden brown and cooked through.
- Once baked, remove the Baati from the oven and make a small slit in the center of each.
- Drizzle a little ghee over the hot Baati. The ghee enhances the flavor and adds richness.
- Serve the Baati hot with your choice of Chokha (roasted eggplant, potato, or tomato).
