Ingredients
For the Moong Dal
- 1 cup Mung Bean yellow
- 1/2 tsp Turmeric Powder
- 1 1/2 tsp Salt or to taste
For the Tempering
- 1 tbsp Ghee
- 1 tsp Coriander ground
- 1/2 tsp Garam Masala
- 1/2 tsp Chili Powder red
For the Sandwich Assembly
- 2 tsp Butter
- 1 Cucumber thinly sliced
- 1 Onion thinly sliced
- 1/4 cup Coriander chopped, for garnish
- 2 tbsp Tomato Sauce
- 1 1/2 tsp Salt or to taste
- 1/2 tsp Chaat Masala
- 1/2 tsp Chili Powder red
- 1/2 tsp Coriander ground
- 1 pinch Pepper black
- 1/4 cup Chickpea Noodle or bhujia
Instructions
- Rinse the moong dal thoroughly and soak in water for 15-20 minutes. This helps the dal cook evenly and reduces cooking time.
- Pressure cook the soaked dal with turmeric powder and salt for 3 whistles. Allow the pressure to release naturally.
- Whisk the cooked dal until smooth and slightly thick.
- In a small pan, heat the ghee over medium heat. Add ground coriander, red chili powder, and garam masala. Turn off the heat immediately to prevent the spices from burning. This blooming process enhances their flavor.
- Pour the tempering over the cooked dal and simmer for a few minutes to infuse the flavors.
- Butter one slice of bread. Layer with cucumber and onion slices. Sprinkle with chaat masala, red chili powder, and garam masala.
- Spread tomato sauce on the other slice of bread. Top with the first slice to create the sandwich.
- Heat a griddle or pan over medium heat. Add butter or ghee. Toast the sandwich on both sides until golden brown and the filling is heated through.
- Place the toasted sandwich on a serving plate. Cut into four pieces.
- Pour the hot dal generously over the sandwich pieces.
- Garnish with chopped cilantro, sev or bhujia, and a sprinkle of chaat masala, red chili powder, garam masala, and black pepper.
- Serve immediately and enjoy the warm, flavorful Moong Dal Sandwich.
Recipe Notes
Good To Know
- For an extra-crunchy texture, toast the sandwich on a hot griddle with a thin layer of ghee until both sides are golden and crisp, pressing gently with a spatula as it cooks.
- If you want to add a tangy kick, sprinkle a little chaat masala or squeeze some lemon juice over the moong dal filling just before assembling the sandwich.
- To keep the bread from turning soggy, layer fresh salad leaves (like lettuce or spinach) on both slices of bread before adding the dal filling and chutneys.
- For a vegan version, substitute desi ghee with a good-quality vegan butter or neutral oil, and ensure your chutneys are dairy-free.
Expert Tips
- For a richer flavor, try sprouting the moong dal before cooking. This adds a slightly nutty taste and improves the texture.
- Customize your sandwich with other fillings like sliced cucumbers, tomatoes, or onions for added crunch and freshness.
- Experiment with different chutneys like mint-coriander chutney, tamarind chutney, or even a spicy garlic chutney to create unique flavor combinations.
Storage Instructions
- These sandwiches are best enjoyed fresh. If you have leftovers, store them in an airtight container at room temperature for up to 2 hours. Do not refrigerate as this will make the bread soggy.
