Ingredients
For the Chickpeas

- 1 1/2 cup Chickpeas cooked, from 1 cup dried or 2 (15-ounce) cans
- 6 clove Garlic crushed
- 1/2 tsp Paprika smoked
- 1/4 tsp Cayenne Pepper or more, to taste
- 1/4 tsp Cumin ground
- 1 tbsp Lemon Juice freshly squeezed
- 2-4 tbsp Virgin Olive Oil extra, plus extra for drizzling
- 1/4 cup Tahini
- 1/4 - 1/2 cup Water to adjust consistency
- 1-2 tsp Salt or to taste
For Garnish
- 1/4 tsp Paprika smoked
- 1 tbsp Virgin Olive Oil extra, for drizzling
Instructions
Prepare the Chickpeas
- Soak 1 cup of dried chickpeas in 6 cups of water for at least 6-8 hours, or overnight. Drain and rinse. Pressure cook the chickpeas with 2 cups of fresh water for 4-5 whistles, or until tender. Alternatively, use 2 (15-ounce) cans of chickpeas, drained and rinsed.
Make the Hummus
- Combine the cooked chickpeas, garlic, smoked paprika, cayenne pepper, cumin, lemon juice, tahini, 2 tablespoons olive oil, and salt in a food processor.
Blend Until Smooth
- Blend until completely smooth and creamy, stopping to scrape down the sides as needed. Add more olive oil (up to 2 tablespoons) or water (1/4 - 1/2 cup), a tablespoon at a time, to reach desired consistency. Taste and adjust seasoning as needed.
Garnish and Serve
- Transfer the hummus to a serving bowl. Garnish with a sprinkle of smoked paprika and a drizzle of olive oil. Serve immediately with pita bread, vegetables, or crackers.
