  • 1 cup Chickpeas drained and rinsed, dried, or 2 (15-ounce) cans
  • 6 cup Water for soaking chickpeas

Prepare the Chickpeas

  • Soak 1 cup of dried chickpeas in 6 cups of water for at least 6-8 hours, or overnight. Drain and rinse. Pressure cook the chickpeas with 2 cups of fresh water for 4-5 whistles, or until tender. Alternatively, use 2 (15-ounce) cans of chickpeas, drained and rinsed.

Make the Hummus

  • Combine the cooked chickpeas, garlic, smoked paprika, cayenne pepper, cumin, lemon juice, tahini, 2 tablespoons olive oil, and salt in a food processor.

Blend Until Smooth

  • Blend until completely smooth and creamy, stopping to scrape down the sides as needed. Add more olive oil (up to 2 tablespoons) or water (1/4 - 1/2 cup), a tablespoon at a time, to reach desired consistency. Taste and adjust seasoning as needed.

Garnish and Serve

  • Transfer the hummus to a serving bowl. Garnish with a sprinkle of smoked paprika and a drizzle of olive oil. Serve immediately with pita bread, vegetables, or crackers.
