Ingredients
For the Beetroot
- 1 medium Beetroot
For the Hummus
- 1 cup Chickpeas kabuli chana, cooked (canned is fine)
- 2 tbsp Sesame Seeds
- 2 clove Garlic roughly chopped
- 1/2 tsp Salt or to taste
- 2 tbsp Lemon Juice freshly squeezed
- 1/4 cup Olive Oil plus extra for drizzling
- 1 tsp Cumin ground, optional
- 1/4 tsp Pepper black, freshly ground
- 1/4 tsp Pepper Flakes or to taste, red
For Garnish
- 1/4 cup Olives black, optional, sliced
- 2 tbsp Parsley chopped, fresh, optional
- Pita Bread Or Vegetables for serving
Instructions
Prepare the Beetroot
- Boil the beetroot until tender (about 45-60 minutes, depending on size). Let cool, then peel and chop.
Make the Hummus
- In a food processor, combine the cooked chickpeas, chopped beetroot, sesame seeds, garlic, salt, lemon juice, cumin, and black pepper.
- Process until smooth. With the motor running, slowly drizzle in the olive oil until fully incorporated. Add a tablespoon or two of water if needed to reach desired consistency.
