Ingredients
Dough
- 2 cup All-Purpose Flour maida
- 1 tsp Sugar
- 1 tsp Baking Powder
- 1/4 tsp Baking Soda
- 1 tsp Salt
- 1/4 cup Yogurt fresh and thick
- 2 tsp Oil
- Water as needed for kneading, lukewarm
Potato Stuffing
- 2 large Potatoes boiled and peeled
- 1 Chili finely chopped, green
- 1 tsp Kashmiri Chili Powder red
- 1 inch Ginger grated
- 1/4 tsp Carom Seeds ajwain
- 1/4 tsp Garam Masala
- 2 tbsp Coriander Leaves finely chopped
- Salt to taste
For Assembly and Garnish
- 2 tsp Sesame Seeds black
- 3 tbsp Coriander Leaves finely chopped
- 2 tbsp Butter
Instructions
- In a large bowl, combine the all-purpose flour, sugar, baking powder, baking soda, and salt. This creates the base for the kulcha dough.
- Add the yogurt and oil to the dry ingredients. Mix well to incorporate.
- Gradually add lukewarm water while kneading the dough until it becomes smooth and elastic. This process should take about 8-10 minutes. Kneading develops the gluten, resulting in a soft kulcha.
- Cover the dough with a damp cloth and let it rest in a warm place for 2 hours. This allows the dough to rise and become more pliable.
- While the dough rests, prepare the stuffing. In a bowl, mash the boiled potatoes thoroughly.
- Add the chopped green chili, Kashmiri red chili powder, grated ginger, carom seeds, garam masala, chopped coriander leaves, and salt to the mashed potatoes. Mix well to combine all the flavors.
- After the dough has rested, divide it into equal-sized balls.
- Roll each ball into a circular disc. Place a portion of the potato stuffing in the center of each disc.
- Bring the edges of the dough together and pleat them towards the center, enclosing the stuffing completely. Ensure the stuffing is sealed inside to prevent leakage during cooking.
- Sprinkle sesame seeds and coriander leaves over the pleated dough.
- Gently roll the stuffed dough into an oval shape using a rolling pin.
- Brush one side of the kulcha with water. This helps it stick to the tawa.
- Place the water-brushed side of the kulcha on a preheated tawa (griddle) and cook for a minute. Pressing gently ensures even cooking.
- Flip the tawa upside down and cook the kulcha directly on the flame until golden brown spots appear. This gives the kulcha its characteristic smoky flavor and slightly charred texture.
- Remove the kulcha from the tawa and spread butter generously on top. Serve hot and enjoy!
