Ingredients
For the Dough
- 2 cup All-Purpose Flour also known as maida
- 2 tbsp Oil vegetable oil or ghee
- 1 tsp Salt
- 3/4 - 1 cup Water add gradually as needed to achieve desired dough consistency
For the Filling
- 2 medium Potatoes boiled and mashed
- 1 medium Onion finely chopped
- 2-3 Chilies finely chopped, green
- 1.5 tsp Salt or to taste
- 1/2 tsp Chili Powder red
- 1/2 tsp Garam Masala
- 1/4 tsp Mango Powder amchur, dry
- 1/4 tsp Carom Seeds ajwain
- 1/4 tsp Cumin Seeds
- 1 tbsp Coriander dhania, finely chopped
- 1 tsp Sesame Seeds black
- 2 tbsp Coriander dhania, for garnish
- 2 tbsp Butter melted, for serving
Instructions
Prepare the Dough
- Combine all-purpose flour, oil, and salt in a large bowl. Gradually add water, kneading until a smooth, soft dough forms. Let the dough rest for at least 40 minutes.
Prepare the Filling
- In a separate bowl, combine mashed potatoes, chopped onions, green chilies, salt, red chili powder, garam masala, dry mango powder, carom seeds, cumin seeds, and chopped coriander leaves. Mix well.
Assemble and Cook the Kulchas
- After the resting period, knead the dough briefly. Take a small portion of the dough, roll it into a circle, and place a spoonful of the potato filling in the center. Bring the edges together, pinching to seal the filling completely. Gently roll the stuffed dough ball again into a slightly flattened circle.
- Heat a tawa (flat griddle) over medium heat. Place the kulcha on the hot tawa and cook for about 2 minutes on each side, or until lightly browned.
