Ingredients
Dough
- 250 gm Whole Wheat Flour whole
- 50 gm All-Purpose Flour
- 1 tsp Active Yeast dry
- 1 tsp Honey
- 1 tsp Salt
- 2 tbsp Olive Oil
- 100 ml Milk
- 100 ml Water
Garnish
- ½ cup Coriander chopped

- 1 tbsp Butter
Instructions
- In a bowl, dissolve the honey and yeast in lukewarm milk. This activates the yeast and helps the dough rise.
- Prepare the filling by combining the mashed potatoes, chopped onion, ½ teaspoon of salt, and ½ teaspoon of red chili powder in a bowl. Mix well and set aside.
- In a large mixing bowl, combine the whole wheat flour, all-purpose flour, 1 tablespoon of olive oil, and salt. Add the yeast mixture to the dry ingredients.
- Begin kneading the dough until it becomes smooth and elastic. Gradually add water as needed. Kneading develops the gluten, resulting in a soft kulcha.
- Place the dough in a greased bowl, cover it with cling wrap, and let it rest in a warm place for about an hour, or until it doubles in size.
- Punch down the risen dough to release the air. Divide the dough into 6 equal portions. Roll each portion into a circular disc.
- Place a spoonful of the prepared filling in the center of each disc. Carefully seal the edges, ensuring the filling is completely enclosed.
- Gently roll each filled dough ball into a circular kulcha. Preheat your oven to 200°C (400°F) for 10 minutes.
- Place the kulchas on a baking tray. Brush them with milk and sprinkle with chopped coriander. Allow them to rest for 10 minutes before baking.
- Bake the kulchas in the preheated oven for 20 minutes, or until they are golden brown and cooked through. The milk wash helps create a beautiful golden crust.
- Once baked, brush the kulchas with melted butter for added flavor and richness. Serve the hot Amritsari Kulchas immediately and enjoy!
