Ingredients
Chicken & Marinade
- 500 gm Chicken bone-in, skin-on thighs and drumsticks recommended for best flavor and moisture
- 1 cup Yogurt also known as curd
- 1.5 tsp Salt adjust to taste
- 1 tbsp Chili Powder red
- 2 tsp Garam Masala pre-made blend or use recipe below if making your own
- 0.5 tsp Pepper ground, black
- 1 tbsp Ginger-Garlic Paste
- 1 piece Mace
- 1/4 tsp Nutmeg ground
- 3 tbsp Ghee clarified butter
Rice & Aromatics
- 2 cup Basmati Rice long grain
- 3 cup Water for cooking rice
- 8 Cardamom Pods elaichi, green
- 1 Bay Leaf tej patta
- 3 sticks Cinnamon cinemon
- 4 Cloves
Vegetables & Garnishes
- 3 medium Onion sliced
- 1/2 cup Coriander dhania, chopped
- 1/2 cup Mint Leaves fresh
- 1 tbsp Butter
Instructions
Prepare the Rice
- Wash and soak basmati rice in water for at least 30 minutes. Drain well.
Marinate the Chicken
- In a large bowl, combine the chicken with yogurt, salt, red chili powder, garam masala, black pepper, ginger-garlic paste, mace, nutmeg, and 1 tbsp ghee. Mix thoroughly and marinate for at least 30 minutes, or preferably longer in the refrigerator.
Sauté Onions and Cook Rice
- Heat the remaining ghee in a large pan or pot over medium heat. Add the sliced onions and sauté until golden brown. In a separate pot, combine the soaked rice, 3 cups of water, cinnamon sticks, bay leaf, green cardamom pods, and cloves. Bring to a boil, then reduce heat and simmer until the rice is almost cooked but still slightly firm (al dente).
Layer and Cook the Biryani
- In a large, oven-safe pot or Dutch oven, layer half of the cooked rice, then the marinated chicken, followed by the sautéed onions. Top with the remaining rice and dot with butter. Scatter fresh cilantro and mint leaves over the top. Cover the pot tightly and cook in a preheated oven at 350°F (175°C) for about 20-25 minutes, or until the chicken is cooked through and the rice is tender and fluffy. Alternatively, you can cook on the stovetop on low heat for 30-40 minutes, covered and with a heavy lid. Let it rest for 10-15 minutes before serving.
