- 2-4 Bay Leaves
- 4 Cardamom Pods black
- 10-15 Peppercorns black
- 8 Cardamom Pods green
- 1 Star Anise
- ½ inch Mace
- 1 inch Cinnamon Stick
- ½ tsp Caraway Seeds
- 4 Cloves
- 1 tbsp Coriander Seeds crushed
Instructions
- In a mixing bowl, combine the yogurt, turmeric powder, ginger, garlic, green chilies (if using), and ½ teaspoon of salt.
- Add the chicken pieces and rub the marinade thoroughly into the chicken. Ensure all pieces are well coated. Cover the bowl and let the chicken marinate for at least 30 minutes in the refrigerator. This allows the chicken to absorb the flavors and tenderize.
- Heat the mustard oil in a large pot or wok over medium heat. While the oil is heating, thinly slice the onions.
- Once the oil is hot, add the bay leaves and all the other whole spices (khade masale). Sauté for about 30 seconds until fragrant. Adding the spices to the hot oil helps release their aromatic oils, creating a deeper flavor.
- Add the sliced onions and the remaining ½ teaspoon of salt to the pot. Sauté the onions until they turn golden brown and translucent, stirring occasionally. This caramelization process adds sweetness and depth to the dish.
- Add the marinated chicken to the pot and stir well to coat the chicken with the spiced onion mixture. Ensure the chicken is evenly distributed in the pot.
- Cover the pot with a lid and cook for 15 minutes, or until the chicken is almost cooked through. Stir occasionally to prevent sticking and ensure even cooking.
- To check for doneness, insert a knife into the thickest part of a chicken piece. If the juices run clear, the chicken is cooked. If not, continue cooking for a few more minutes.
- If desired, you can reduce the sauce by removing the lid and cooking over medium heat until the sauce reaches your preferred consistency. This step intensifies the flavors and creates a richer curry.
- Add 1 cup of water (or as needed) to create a curry. Bring to a simmer and cook for a few more minutes to allow the flavors to meld.
- Garnish with freshly chopped cilantro. Serve hot with chapati, roti, or rice.
