Ingredients
Cauliflower & Preparation
- 1 Cauliflower about 1.5-2 lbs, large
- 1/2 tsp Salt for blanching cauliflower
Dry Spice Blend
- 6 Peppercorns black
- 2 Cardamom Pods black
- 2 tbsp Coriander Seeds whole
- 1 tsp Cumin Seeds also known as jeera
- 2 Chili lal mirch, adjust to taste, red, whole
- 2 Cardamom Pods elaichi, green, optional
Other Ingredients
- 1.5 tsp Salt or to taste
- 1/4 tsp Turmeric Powder haldi
- 1 tsp Fenugreek Seeds methi dana
- 1 tbsp Oil vegetable or canola
Instructions
Prepare the Cauliflower
- Cut the cauliflower into medium-sized florets. Blanch in salted boiling water for 10-15 minutes until slightly tender-crisp. Drain well and pat completely dry with a clean kitchen towel.
Toast and Grind the Spices
- Dry roast the black peppercorns, coriander seeds, black cardamom, green cardamom (if using), and cumin seeds in a dry pan over medium heat until fragrant. Let them cool slightly, then coarsely grind using a mortar and pestle or spice grinder.
Cook the Cauliflower
- Heat oil in a pan or pot. Add fenugreek seeds and let them splutter for a minute. Add the ground spice mixture and sauté for 2 minutes until fragrant. Stir in the turmeric powder and red chilies.
Simmer and Serve
- Add the blanched cauliflower florets and 1/2 cup water. Cover the pan and simmer for 8-10 minutes, or until the cauliflower is tender but still retains some bite. Stir in salt to taste and the yogurt. Garnish with fresh cilantro before serving. Serve hot with roti, naan, or rice.
