Ingredients
Rice & Liquid
- 1 cup Basmati Rice long grain basmati rice. rinse thoroughly before using.
- 2 cup Water adjust as needed for desired consistency.
Aromatics & Spices
- 2 tbsp Vegetable Oil or any neutral-flavored oil.
- 1/2 tsp Cumin Seeds
- 1/2 tsp Mustard Seeds
- 1/2 tsp Peppercorns black
- 2 Bay Leaves also known as tej patta
- 4 Cloves
- 2 tsp Chili Powder adjust to your spice preference., red
- 1/2 tsp Turmeric Powder
- 1 tsp Garam Masala
- 1 tsp Salt or to taste
Vegetables
- 1 medium Onion finely chopped
- 1 medium Tomato finely chopped
- 1 medium Potato cubed
- 1 cup Peas fresh or frozen, green
- 1 cup Cauliflower Florets
- 1 tbsp Ginger-Garlic Paste
Garnish
- 1/4 bunch Coriander fresh, chopped, for garnish
Instructions
Prepare the Rice
- Wash and soak basmati rice in water for 10-15 minutes.
Prepare the Vegetables
- Finely chop the onion and tomato. Cube the potato.
Sauté the Spices
- Heat vegetable oil in a pan or pot over medium heat. Add cumin seeds and mustard seeds. Once they start to splutter, add bay leaves, cloves, and black peppercorns. Sauté for 2-3 minutes until fragrant.
Add Aromatics and Spices
- Add the chopped onion and sauté for 2-3 minutes until softened. Stir in the ginger-garlic paste and sauté for another minute. Add turmeric powder, red chili powder, and garam masala. Sauté for 3-4 minutes, stirring constantly to prevent burning.
Add Vegetables and Rice
- Add the chopped tomatoes, potatoes, green peas, and cauliflower florets. Sauté for 2-3 minutes. Stir in the soaked rice and salt. Mix well to combine all ingredients.
Simmer and Cook
- Pour in 2 cups of water. Bring to a boil, then reduce heat to low, cover the pan, and simmer for 15-20 minutes, or until the rice is cooked through and the water is absorbed. Stir gently halfway through cooking.
Garnish and Serve
- Once cooked, fluff the rice with a fork. Garnish with fresh coriander leaves. Serve hot and enjoy your delicious Masale Bhaat!
