Marinate the Chicken

  • Marinate the chicken for at least 30 minutes (or up to 2 hours in the refrigerator) with the juice of 1 lemon, 2 tbsp ginger-garlic paste, 1.5 tsp salt, 1 tsp turmeric powder, and 1 tsp red chili powder.

Prepare the Spice Paste

  • Heat 2 tbsp of oil in a pan over medium heat. Add 1.5 tbsp coriander seeds and sauté until lightly browned. Add 1 tbsp fennel seeds, 2-inch cinnamon stick, 5 cloves, 15 peppercorns, 1 inch ginger, and 7 cloves garlic. Sauté for 1-2 minutes until fragrant.

Grind the Spice Paste

  • Remove from heat and let cool slightly. Grind the mixture into a smooth paste using a blender or food processor, adding a little water if needed.

Sauté Onions and Aromatics

  • Heat 2 tbsp of oil in a large pot or Dutch oven over medium heat. Add the sliced onions and sauté until golden brown. Add 20 curry leaves and sauté for 30 seconds until fragrant.

Build the Curry

  • Add the prepared spice paste to the pot and cook for 5 minutes, stirring frequently. Add the chopped tomatoes and tomato puree. Cook for another 5 minutes until the tomatoes soften slightly. Add the chopped green chilies and cook for 2-3 minutes more.

Blend the Curry Base (Optional)

  • For a smoother curry, remove from heat and carefully blend the curry base using an immersion blender or carefully in a regular blender. Be cautious when blending hot liquids.

Cook the Chicken

  • Return the mixture to the pot. Bring to a simmer, then add the marinated chicken. Add more salt to taste. Reduce heat to low, cover, and simmer until the chicken is cooked through (about 20-25 minutes), stirring occasionally.

Garnish and Serve

  • Garnish with fresh cilantro and serve hot with steamed basmati rice, naan bread, or roti.
