Bitter gourd is an antiviral vegetable. For those who are affected by diabetes, it's recommended to include bitter gourd in their daily diet. I stuffed the bitter gourd with pumpkin. Those who aren't fond of bitter gourd may enjoy this recipe.

- Boil the bitter gourd and remove the seeds. Then, boil it in water with a little salt.
- Grate the pumpkin, heat a pan, pour oil, then add gram flour. Stir for a few seconds.
- Add grated pumpkin, salt, red chili powder, roasted coriander powder, roasted five-spice blend, and roasted cumin powder.
- Stir continuously, then add raw mango pulp. Cook until dry, then set aside.
- Now, squeeze the boiled bitter gourd and fill it with the cooked pumpkin mixture. Tie it with a thread to ensure the filling does not come out.
- Pour a little oil in a pan and shallow fry the stuffed bitter gourd until all sides are cooked. Serve the stuffed bitter gourd with rice, chapati, paratha, or as desired.
Notes
- If you can't find it fresh every season, you can use dried raw mango powder instead.
