Arbi or the colocasia root makes for a delicious fried vegetable. It is usually served with sambar and plain rice in Tamil households.

Ingredients
  

  • Arbi or colocasia root - 6-7
  • Turmeric powder - 1/2 tsp
  • Red chilli powder - 1 tsp
  • Salt
  • Oil - 4 tsp
  • Mustard seeds - 1 tsp
  • Hing - 1/2 tsp
  • Curry leaves - 1 sprig

Instructions
 

  • Pressure cook the colocasia root for 10 -15 minutes. Once it cools, peel and cut into roundels.
  • Heat oil in a kadai and mustard seeds. Add the hing and curry leaves.
  • Now add the colocasia pieces and mix well. Add turmeric powder, red chilli powder and salt.
  • Cook on high flame for 5 minutes. Now lower the flame and cook for another 8-10 minutes.
  • Enjoy with sambar and hot rice.

Notes

Do not over cook the colocasi or mash them.
