About Arbi Ki Sabji
Arbi or the colocasia root makes for a delicious fried vegetable. It is usually served with sambar and plain rice in Tamil households.

Ingredients
- 6 Arbi or colocasia root
- 1/2 tsp Turmeric Powder
- 1 tsp red chili powder
- 1-2 tsp Salt or as per taste
- 4 tsp Oil
- 1 tsp Mustard Seeds
- 1/2 tsp asafoetida
- 1 leaves Curry

Instructions
- Pressure cook the colocasia root for 10 -15 minutes. Once it cools, peel and cut into roundels.
- Heat oil in a kadai and mustard seeds. Add the hing and curry leaves.
- Now add the colocasia pieces and mix well. Add turmeric powder, red chilli powder and salt.
- Cook on high flame for 5 minutes. Now lower the flame and cook for another 8-10 minutes.
- Enjoy with sambar and hot rice.
Recipe Notes
Do not over cook the colocasi or mash them.
