Healthy Vegetable Spicy Semolina Cake

Do you find it extremely difficult to make your child eat vegetables? If yes, then you are no different. Especially to fussy eaters, it has always been challenge to make them eat different vegetables. My 9 year has a lot of tantrum when it comes to eating vegetables. Ironically, not any more. This savoury semolina cake is a perfect and delightful way to make your fussy eaters eat vegetables. Children tend to eat potatoes most of the time and they run away eating healthy vegetables. This is one best way I could find to make my 9-year-old son eat a variety of vegetables.

Ingredients
- Semolina 1 cup
- Curd ½ cup
- Water ½ cup
- Salt 1 tsp
- Red Chilli Powder ½ tsp
- Cumin Seeds 1 tsp
- Mustard Seeds 1 tsp
- Chilli Flakes 1 tbsp
- Oregano 1 tbsp
- Baking Soda ½ tsp
- Chopped Onion ½ cup
- Chopped Beans ¼ cup
- Chopped Bell Pepper ¼ cup
- Grated Carrot ¼ cup
- Peas ¼ cup
- Grated Ginger 1 tbsp
- Green Chilli 1 tbsp
- Olive Oil 1 tbsp

Instructions
- Take a bowl and in the bowl, mix semolina with curd, water and all the spices. Keep this batter aside for 10 minutes.
- Heat a pan and add oil. Once the oil is hot, add mustard and cumin seeds. Add chopped onion and sauté it for 5 min. Further, add chopped beans, chopped bell pepper and peas to onions and continue to sauté these vegetables for another 5 minute.
- Add sautéed vegetables along with grated carrot, ginger and green chillis to the batter and make a smooth batter of medium consistency.
- Now add baking soda and transfer the mixture into a greased mould (I used a silicon mould to avoid any greasing). Sprinkle chilli flakes and oregano on top of it. Keep this mould in a preheated oven @180 C for 20-25 min or till it passes the toothpic
- Slice it once it comes to room temperature and serve it with your choice of sauce.
Notes
Use fresh curd and Fine semolina (Sooji) for this recipe.
