  • In a large mixing bowl, combine the whole wheat flour, barley flour, bajra flour, ragi flour, sattu flour, corn flour, and salt.

  • Add the grated radish, chopped green chilies, and chopped coriander leaves to the dry ingredients.
  • Gradually add water while mixing the ingredients to form a smooth and pliable dough. Knead the dough for 2-3 minutes until it becomes soft and slightly elastic. This develops the gluten in the wheat flour, resulting in softer parathas.
  • Divide the dough into small, equal-sized balls. On a lightly floured surface, roll each ball into a thin, circular paratha using a rolling pin.
  • Heat a flat griddle or tawa over medium heat. Add a small amount of oil to the hot tawa.
  • Carefully place the rolled paratha on the hot tawa. Cook for about a minute on each side, or until small bubbles start to appear on the surface.

  • Flip the paratha and drizzle a little more oil around the edges. Cook for another minute, pressing gently with a spatula to ensure even cooking and a light browning. Flipping and pressing ensures the paratha cooks through and develops a crispy texture.
  • Once both sides are golden brown and cooked through, remove the paratha from the tawa. Serve hot with your favorite pickle or chutney.
