Ingredients
Millets & Grains
- 1 cup Little Millet also known as samai
- 1 cup Kodo Millet also known as varagu
- 1 cup Foxtail Millet also known as thinai
- 1 cup Corn Rava also known as chola rav
Instructions
Preparing the Millets and Dal
- Wash 1 cup each of little millet, kodo millet, foxtail millet, and urad dal thoroughly. Soak them in ample water for at least 5-6 hours, or preferably overnight.
Grinding the Batter
- Drain the soaked millets and dal. Add them to a blender along with 1 teaspoon of salt and enough water to achieve a smooth, pourable batter. Grind until completely smooth. The consistency should be similar to regular idli batter.
Fermentation
- Transfer the batter to a large bowl, cover it loosely with a lid or clean cloth, and allow it to ferment in a warm place for 8-10 hours, or overnight. The batter should rise slightly and become fluffy.
Steaming the Idlis
- Once fermented, gently mix the batter with a ladle. Grease your idli plates lightly with oil. Fill each idli mold about ¾ full with the batter. Steam the idlis for 20-25 minutes, or until they are cooked through and firm to the touch.
Serving
- Once cooked, carefully remove the idlis from the plates. Serve hot with your favorite sambar and chutney.
