Dough Ingredients

  • 1 cup Whole Wheat Flour whole
  • 2 tbsp Milk for kneading if dough is too sticky, or water, if needed
  • 2 1/2 cup Water or milk
  • 3/4 tsp Yeast dry
  • 3/4 tsp Sugar
  • 1 1/2 tsp Salt or to taste
  • 2 tbsp Oil for kneading

  • In a bowl, combine the warm water (or milk) and sugar. Gently sprinkle the yeast over the surface and let it bloom for about 10 minutes. This activates the yeast and ensures a good rise.
  • In a large bowl, whisk together the whole wheat flour and salt.
  • Add the bloomed yeast mixture to the flour mixture. Mix gently to combine.
  • Knead the dough for 12-15 minutes, gradually adding the oil. If the dough feels too dry, add 1-2 tablespoons of milk as needed. The dough will be sticky initially but will become smoother as you knead.
  • Place the dough in an oiled bowl, cover with plastic wrap, and let it rise in a warm place for 1-2 hours, or until doubled in size.
  • While the dough is rising, prepare the Paneer filling. Heat the oil in a pan over medium heat. Add the chopped onions and sauté until translucent.
  • Add the chopped tomatoes and seasonings (salt, red chili powder, and turmeric powder) to the pan. Cook until the mixture softens and thickens.
  • Add the blanched and chopped mushrooms and paneer cubes to the pan. Cook for about 5 minutes, or until heated through. Stir in the chopped cilantro.
  • Gently punch down the risen dough to release the air. Divide the dough into small portions and roll them into balls of various sizes.
  • Flatten each ball and fill it with the prepared Paneer filling. Shape the filled dough into animal figures, such as pigs, bears, or birds. Use black peppercorns for eyes.

  • Place the shaped buns on a lined baking sheet. Brush the tops with melted butter and let them rise for another 30 minutes.
