Ingredients
Dry Ingredients
- 3 cup Whole Wheat Flour atta, whole
- 1 cup Corn Flour makkai ka atta
- 1 tsp Carom Seeds ajwain
- 1/2 tsp Chili Powder red
- 1/2 - 1 tsp Salt or to taste
Instructions
Prepare the Dough
- Combine the whole wheat flour, corn flour, carom seeds, red chili powder, and salt in a large bowl. Add the finely chopped fenugreek leaves, green chilies, onion, and grated ginger. Gradually add warm water while mixing until a soft, pliable dough is formed. Add more water if needed.
Knead the Dough
- Knead the dough thoroughly for about 5-7 minutes until it becomes smooth and elastic. Add a tablespoon of ghee to the dough while kneading for added softness and flavor. Cover the dough with a damp cloth and let it rest for at least 15-20 minutes.
Make the Rotis
- Divide the dough into small, equal-sized balls. Roll each ball into a thin, circular roti using a rolling pin.
Cook the Rotis
- Heat a flat griddle or tava over medium heat. Place the rolled roti on the hot griddle and cook for about 30 seconds on each side, or until small bubbles begin to form. Now flip the roti and cook the other side for another 30 seconds. Apply a small amount of ghee to each side to enhance its flavor and texture.
Serve and Enjoy
- Serve the Methi Makki Rotis hot with ghee or butter. They pair well with curries, dals, and other Indian dishes.
Recipe Notes
Expert Tips for Perfect Methi Makki Rotis
- For a softer roti, let the dough rest for at least 30 minutes. The longer it rests, the softer the rotis will be.
- Adjust the amount of green chilies based on your spice preference. If you prefer a milder flavor, use fewer chilies.
- If the dough feels too dry, add a little more warm water, a teaspoon at a time, until you reach the desired consistency.
- For a richer flavor, add a pinch of asafoetida (hing) to the dough.
