Ingredients
Potatoes
- 10 Potatoes medium
For the Curry
- 1 cup Yogurt not sour
- 1 Tbsp Ginger-Garlic Paste
- 1 Tbsp Cashews
Spices
- 1 tsp Kashmiri Chili Powder red
- ½ tsp Cardamom Powder
- ½ tsp Fennel Seeds
- 1 tsp Cumin Seeds
- 1 tsp Coriander Powder
- 2 Bay Leaves
- ⅛ tsp Asafoetida Powder
- ¼ tsp Turmeric Powder
- ½ tsp Garam Masala
Other Ingredients
- 1 Tbsp Coriander Leaves for garnish, chopped, fresh
- 5 Tbsp Cooking Oil for frying
- 1 ½ tsp Salt or to taste
- 1 cup Water
Instructions
- Wash the potatoes and cut them in half. There's no need to peel them. This helps them hold their shape during frying and adds a rustic touch.
- Heat the cooking oil in a large pot or kadhai over medium-high heat. Once hot, carefully add the potatoes and fry until golden brown and crispy. This deep-frying step creates a wonderful textural contrast with the creamy sauce.
- Remove the fried potatoes and set them aside on a plate lined with paper towels to drain excess oil.
- In a mixing bowl, combine the yogurt, ginger-garlic paste, cashews (you can grind them into a powder if you prefer a smoother gravy), Kashmiri red chili powder, cardamom powder, fennel seeds, cumin seeds, and coriander powder. Whisk well to combine and ensure the spices are evenly distributed.
- In the same pot, leave about 2 tablespoons of the oil used for frying. Add the asafoetida powder and bay leaves. Sauté for about 30 seconds over low heat to release their aromas. Asafoetida adds a unique savory depth, while bay leaves contribute a subtle herbal note.
- Add the water, salt, and turmeric powder to the pot. Bring the mixture to a boil.
- Pour the spiced yogurt mixture into the pot and cook for about 5 minutes over high heat, stirring occasionally. This allows the yogurt to cook through and the flavors to meld.
- Gently add the fried potatoes and garam masala to the curry. Reduce the heat to medium and simmer until the oil starts to separate from the gravy, indicating that the curry has thickened and the flavors have deepened. This creates a rich, flavorful, and visually appealing dish.
- Transfer the Kashmiri Dum Aloo to a serving bowl. Garnish with fresh coriander leaves. Serve hot with rumali roti, chapati, naan, or rice.
Recipe Notes
Good To Know
- For extra crispy potatoes, after frying, place them on a wire rack instead of paper towels—this prevents steam from softening the crust and maintains the crunch.
- If you prefer a thicker, creamier gravy, blend the cashew powder with a small amount of warm water before adding it to the sauce to avoid lumps and achieve a silky texture.
- To infuse more flavor into the potatoes, prick them all over with a fork before frying and simmering—this allows the gravy to penetrate deeper into each potato.
- For a vegan variation, substitute thick coconut yogurt or cashew yogurt for the dairy yogurt, and increase the amount of cashew powder for added richness.
Expert Tips
- Adjust the spice level by adding a pinch of cayenne pepper or a dash of your favorite hot sauce to the gravy.
- For a richer flavor, use vegetable broth instead of water when simmering the potatoes.
- Garnish with fresh herbs like cilantro or parsley before serving for a pop of color and freshness.
Storage Instructions
- Store leftover potatoes and gravy separately in airtight containers in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
